Greetings Friends! What a beautiful Spring in Ontario this year! It was dry to begin with but now the rains are coming exactly when we need them and the growing plants couldn't be happier. We are so excited to share the harvest with you all! There are so many wonderful things in season right now. One day we hope to grow asparagus and strawberries, but for now you can find these delicious items fresh from other farms at your local Farmer's Market. Our first baskets will include sugar snap peas, beets, mesclun mix, garlic blossoms (scapes), purple top white turnips, radishes, rhubarb and kale. What are "garlic scapes" you ask? Garlic scapes are the soft, lime-green-colored stems and unopened flower buds of hard-neck garlic varieties. Scapes have a mild garlic flavor and a slight sweetness, which makes them a prized addition in the kitchen. You can use them the same way you regular garlic, however they are excellent in homemade fresh pesto sauce. You might like to try some of the following recipes. Countless baby plants sown and growing. We purchased new chicks, ducklings and goslings to replenish our stock, and one of two foals have been born. We had 36 piglets born at the end of March that were sold to other small farms upon weaning, and there is one last litter due next week! The last of our outdoor ethically raised Winter/Spring pigs were sent for processing last week after eating thousands of pounds of pumpkin, squash, alfalfa and a non-GMO grain blend. We will have a fresh supply in our freezers this coming weekend. We now carry breakfast sausages (approx. 16 links/lbs), as well as regular sized Honey Garlic, Hot Italian, Mild Italian, Maple and BBQ. Great for your Summer grill! No fillers, just our flavourful pork and seasonings. Our naturally wood smoked bacon will be back in stock as well. Regular or thick cut available in 1 lbs packages. We also have loin chops, butt chops, side ribs, tenderloin, roasts, smoked and regular hocks, minced pork, meaty bones for the best stock you've ever had, and smoked ham steaks. If you are a CSA member you can have our pork added to your weekly orders by request. Payment can be made by email money transfer or at the time of delivery. You can also now find us at the Clarington Farmer's Market in Newcastle! We will have all these cuts available this Sunday as well as some of our freshly picked produce. These are the first pigs born on our farm and we couldn't be more proud. These Berkshire/Large English Black pigs were raised over the winter in deeply bedded comfortable shelters with access outside to soak up the sun on "warm" days. They ate several thousand pounds of local pumpkins and squash, hay, certified organic hog grower, and non-GMO open pollinated corn, oats, peas, wheat, barley, flax meal, bran, supplements & minerals. We are also gearing up for this season's vegetable CSA. Onions are sprouted and growing, and many many others are on their way. Remember if you pay in full by May 1, 2015 you receive a $10 credit on Ironwood Acres pork, produce or eggs. It has been a long winter, and an even colder February, but we have our sights set on a warm horizon, and are enjoying the new lives that come with Spring. Last week 36 piglets were born, and our Akbash cross puppies are finally running around the farm, soon to leave for their new homes. It's busy to say the least.
